Both works explore the highly complex and precise processes behind dishes that seem incredibly simple. By moving the action from Japan to Bolivia, Documentary Now! Sushi replaces chicken and rice, a staple of Latin American cuisine. While Jiro carefully curates each dish using the best seafood in the country, Juan must choose and merrily catch the chicken to serve in his small restaurant. Combining interviews with talking heads, including Hader as a questionable food critic, and an intimate process of preparation by Juan and his less charismatic eldest son Arturo, this episode captures the vivid style of a contemporary documentary. . The mesmerizing photography of each dish is a technical marvel, but the way the episode gets to the heart of the document—the tension between respecting tradition and being caught up in it—is what makes this the series’ go-to.
